Chicken meatballs in tomato sauce

Ingredients (serves 4)
* 8 thin chicken sausages
* 1 tablespoon olive oil
* 1 brown onion, finely chopped
* 1 garlic clove, finely chopped
* 1 tablespoon tomato paste
* 400g can diced tomatoes
* 2 tablespoons thyme leaves
* 500g IGA Bellini Small Shells pasta


Method
1. Using a sharp knife, split sausages open lengthways. Scoop out filling and place in a bowl. Using 2 teaspoonfuls mixture at a time, roll mixture into balls. Place on a plate.
2. Heat oil in a non-stick frying pan over medium heat. Add onion, garlic and tomato paste. Cook, stirring occasionally, for 3 to 4 minutes or until onion is soft. Add tomato, 1 tablespoon thyme and 1 tablespoon water. Cook, stirring, for 2 minutes or until heated through.
3. Add meatballs to pan. Cook, turning, for 5 to 6 minutes or until cooked through. Season with salt and pepper.
4. Meanwhile, cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain. Spoon pasta into bowls. Top with meatballs, sauce and remaining thyme. Serve with toasted sourdough bread.

Notes & tips
* You could buy 500g chicken mince instead of sausages. Add your own seasoning, such as thyme, grated lemon rind and salt and pepper.
