Indian-spiced nut mix


Indian-spiced nut mix

Preparation Time 5 minutes
Cooking Time 15 minutes
Makes About 6 cups

Ingredients

* 100g (1 cup) Brazil nuts
* 160g (1 cup) almond kernels
* 100g (1 cup) walnut halves
* 145g (1 cup) cashew nuts
* 1 x 100g pkt Chang's fried noodles
* 1 egg white
* 2 tsp peanut oil
* 2 tsp ground cumin
* 2 tsp ground coriander
* 2 tsp garam masala
* 1 tsp sweet paprika
* 1 tsp ground fennel
* 1 tsp ground turmeric
* Salt & freshly ground black pepper
* 95g (1/2 cup) Sunbeam flame raisins


Method
1. Preheat oven to 180°C. Combine the Brazil nuts, almonds, walnuts, cashews, noodles, egg white, oil, cumin, coriander, garam masala, paprika, fennel and turmeric in a bowl. Season with salt and pepper. Place in a large roasting pan.
2. Bake in oven, stirring every 5 minutes, for 15 minutes or until nuts are toasted and mixture is aromatic. Add raisins and gently toss to combine. Set aside for 30 minutes to cool to room temperature.
