Kiwi and lime syrup cakes


Preparation Time 15 minutes
Cooking Time 20 minutes

Ingredients (serves 6)
* 1 cup (150g) self-raising flour
* 1/2 cup (75g) plain flour
* 100g almond meal
* 3/4 cup caster sugar
* 125g butter, melted and cooled
* 2 eggs
* 1/2 cup (125ml) milk
* 3 ripe kiwifruit, finely chopped
Syrup
* 1 lime, rind finely grated
* 3/4 cup (180ml) lime juice
* 3/4 cup caster sugar


Method
1. Preheat oven to 180°C. Grease a 6 x 1 cup muffin pan. Place flours, almond meal and sugar in a large bowl. Stir well to combine.
2. Whisk butter, eggs and milk together. Add to dry ingredients with kiwifruit. Mix well. Spoon mixture into pans. Bake for 25-30 minutes or until golden.
3. Cool in pan for 15-20 minutes before turning out onto a wire rack.
4. To make syrup, place lime rind, lime juice and sugar in a small frying pan. Stir over low heat until sugar dissolves. Increase heat and simmer for 8-10 minutes or until thickened slightly.
5. Use a skewer to make holes over the cakes. Pour over the syrup. Place cakes on serving plates and spoon over any syrup caught in the tray. Serve warm.
