Preparation Time 10 minutes
Ingredients (serves 4)
* 20g (1/4 cup) desiccated coconut
* 1 lime wedge
* 125ml (1/2 cup) fresh lime juice
* 80ml (1/3 cup) limoncello
* 80ml (1/3 cup) silver tequila
* 80ml (1/3 cup) Malibu coconut liqueur
* 2 tbs caster sugar
* 1 egg white
* 2 cups crushed ice
Method
1. Place coconut on a plate. Rub the rim of each serving glass with lime wedge. Dip rim of each glass in coconut to coat.
2. Place lime juice, limoncello, tequila, Malibu, sugar, egg white and ice in a cocktail shaker and shake to combine. Strain into glasses to serve.
