Masaman chicken pide


Preparation Time 10 minutes
Cooking Time 35 minutes

Ingredients (serves 6)
* Olive oil, to grease
* 1 tbs olive oil
* 100g (1/2 cup) masaman curry paste
* 2 tsp ground coriander
* 2 (about 400g) single chicken breast fillets, thinly sliced across the grain
* 1 celery stick, trimmed, thinly sliced
* 1 leek, pale section only, thinly sliced, washed, dried
* 1/4 (about 180g) orange sweet potato (kumara), peeled, finely chopped
* 1 loaf Turkish bread, split
* 130g (1/2 cup) natural yoghurt
* 1 egg, lightly whisked
* 1 cup finely shredded fresh basil
* 1 cup fresh coriander leaves
* Bought tzatziki, to serve
* Rocket leaves, to serve


Method
1. Preheat oven to 180°C. Brush a baking tray with oil to lightly grease.
2. Heat the oil in a large frying pan over medium-high heat. Add the curry paste and ground coriander and cook, stirring, for 30 seconds or until aromatic. Add the chicken, celery, leek and sweet potato and cook, stirring, for 10 minutes or until golden brown and just cooked through.
3. Cut the bread in half crossways and place, cut-side up, on the prepared tray. Spoon the chicken mixture evenly among pieces of bread. Combine the yoghurt and egg in a small bowl. Drizzle the chicken mixture with yoghurt mixture and sprinkle with basil. Bake in oven for 20 minutes or until golden brown and cooked through. Remove from oven.
4. Sprinkle pide with coriander leaves. Cut into slices and serve immediately with the tzatziki and rocket leaves.
