Pancakes with citrus syrup


Ingredients (serves 4)
* 1 1/4 cups self-raising flour
* 1/2 teaspoon baking powder
* 1 1/2 tablespoons caster sugar
* 1 egg
* 1 cup milk
* 20g butter, melted, cooled
* olive oil spray
Syrup
* 1/3 cup fresh orange juice
* 1/3 cup fresh lemon juice
* 1/2 cup caster sugar


Method
1. Sift flour and baking powder into a bowl. Add sugar. Whisk egg, milk and butter together in a jug. Slowly pour into flour mixture, whisking until smooth. Set aside for 5 minutes.
2. To make syrup: Place all ingredients into a saucepan. Stir over low heat until sugar dissolves. Increase heat to high. Boil for 5 minutes or until syrup thickens slightly.
3. Heat a small non-stick frying pan over medium heat. Spray with oil. Pour in a 1/4 cupful of batter for each pancake. Cook for 2 minutes or until bubbles appear on pancake surfaces. Turn pancakes over. Cook a further 30 seconds or until cooked through. Transfer to a plate. Cover. Repeat with remaining batter.
4. Place pancakes onto plates. Spoon over syrup. Serve.
