Ricotta, lemon and honey fritters


Preparation Time 10 minutes
Cooking Time 10 minutes

Ingredients (serves 4)
* 250g chilled fresh ricotta
* 1 egg
* 40g (1/4 cup) plain flour
* 2 tbs caster sugar
* 1 lemon, rind finely grated
* 750ml (3 cups) vegetable oil, to shallow-fry
* 80ml (1/3 cup) honey, or to taste


Method
1. Use a balloon whisk or an electric beater to whisk the ricotta, egg, flour, sugar and lemon rind in a medium bowl until almost smooth. Cover and place in the fridge for 10 minutes to chill.
2. Heat oil in a medium saucepan over medium heat. To make 3 fritters, spoon tablespoonsful of mixture into the hot oil. Cook, turning often with a metal spoon, for 2-3 minutes or until golden brown. Transfer to a plate lined with paper towel. Repeat in 2 more batches with the remaining mixture.
3. Divide the fritters among small serving plates. Drizzle with honey and serve immediately.
