Ingredients
* 1 tablespoon flaked almonds
* 1/2 cup pure icing sugar, sifted
* 1/2 teaspoon vanilla essence
* 125g packet amaretti biscuits
Method
1. Place almonds in a small non-stick frying pan over medium-high heat. Cook, stirring often, for 2 to 3 minutes or until almonds are toasted. Place in a food processor. Process until roughly chopped.
2. Using a wooden spoon, mix toasted almonds, icing sugar, vanilla and 2 teaspoons hot water in a small bowl until a thick paste forms (extra hot water may be needed).
3. Sandwich biscuits together with 1 teaspoon almond mixture. Serve.
