Ingredients (serves 12)
* 2 cups chilled sugar syrup (see related recipe)
* 8 large lemons, juiced
* 1 cup tequila
* 3/4 cup Cointreau
* 2 lemons, halved, and salt flakes, to serve
Method
1. Pour sugar syrup into a 3-litre container. Strain 2 cups lemon juice into a jug. Add lemon juice, tequila and Cointreau to syrup. Mix well. Cover and freeze overnight.
2. Rub the rim of serving glasses with cut lemon, then dip into salt. Stir frozen margarita to combine. Spoon into glasses. Serve immediately.
