Potato hash with bacon


Ingredients (serves 8)
* 900g desiree potatoes, peeled, cut into 5cm pieces
* 1 tablespoon olive oil
* 1 red onion, finely chopped
* 100g shortcut bacon rashers, finely chopped
* 1 cup (100g) grated tasty cheese
* 1 egg, lightly beaten
* 2 tablespoons flat-leaf parsley leaves, finely chopped
* 1/2 cup dried breadcrumbs
* olive oil cooking spray


Method
1. Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook, uncovered, for 12 to 15 minutes or until tender. Drain. Transfer to a large bowl. Roughly mash.
2. Meanwhile, heat oil in a frying pan over medium heat until hot. Add onion and bacon. Cook, stirring, for 5 minutes or until onion is tender.
3. Add onion, bacon, cheese, egg and parsley to potato mash. Season with salt and pepper. Stir to combine. Using 1/2 cup of mixture at a time, shape into eight 2cm-thick patties. Place breadcrumbs in a shallow dish. Lightly coat patties in breadcrumbs. Cover and refrigerate.
4. Spray barbecue flat plate with oil. Cook patties for 5 minutes each side or until golden. Serve.
