Summer vegetable salad


Ingredients (serves 12)
* 2 Lebanese cucumbers, halved lengthways, deseeded
* 2 large carrots, peeled
* 2 green capsicum
* 100g snow peas, shredded
* 1 1/2 cups beansprouts, trimmed
* 2 teaspoons caster sugar
* 2 limes, juiced


Method
1. Cut cucumbers, carrots and capsicum into long, thin sticks. Place in a large bowl. Add snow peas and beansprouts. Toss to combine. Cover and refrigerate until ready to serve.
2. Sprinkle sugar over salad and season with salt and pepper. Drizzle with 1/4 cup lime juice and toss to combine. Serve.

Notes & tips
* Variation: For more crunch, add 1/4 cup toasted sesame seeds with the lime in step 2.
