Bangers and mash

Ingredients (serves 4)
* 700g potatoes, peeled, chopped
* 1 tablespoon butter
* 1 small leek, white part only, sliced
* 1/3 cup milk
* 1/3 cup grated parmesan cheese
* 8 thick beef sausages
* 1 tablespoon olive oil
Relish - makes 1 1/2 cups
* 1 tablespoon olive oil
* 1/2 red onion, finely chopped
* 2 red capsicum, cut into 1cm cubes
* 1 large tomato, chopped
* 1 garlic clove, crushed
* 1/4 cup sultanas
* 1/4 cup brown sugar
* 1/3 cup white wine vinegar

Method
1. Make relish: Heat oil in a saucepan over medium heat. Add onion. Cook for 3 minutes, or until soft. Add capsicum. Cook for a further 2 minutes. Stir in tomato, garlic, sultanas, sugar and vinegar. Bring to the boil. Cover. Reduce heat to low. Simmer for 40 to 50 minutes, or until thickened. Set aside to cool.
2. Bring a saucepan of water to the boil. Add potatoes. Cook for 7 to 10 minutes, or until tender. Drain. Set aside.
3. Return saucepan to heat. Add butter and leek. Cook for 2 minutes. Return potatoes to saucepan with milk, parmesan, and salt and pepper. Mash.
4. Heat a chargrill, barbecue plate or frying pan over medium high heat. Brush sausages with oil. Cook for 10 minutes, turning, or until cooked through.
5. Serve with mash and relish.
