Chocolate cherry turnovers


Chocolate cherry turnovers
Bitter-sweet chocolate morsels. You'll be hooked.
Makes 16
Ingredients
* 180g chopped dark cooking chocolate
* 10 chopped marshmallows
* 1/4 cup chopped glace cherries
* 1/4 cup shredded coconut
* 2 egg whites
* 4 puff pastry sheets

Method
1. Preheat oven to 190°C. Line 2 baking trays with non-stick baking paper. Place dark chocolate, marshmallows, cherries and coconut in a large bowl. Add egg whites and mix until fully combined. Set aside.
2. Using a round 10cm biscuit cutter, cut 16 discs from pastry sheets. Place a spoonful of the chocolate mixture on one half of the disc, leaving a 1cm border around the edge. Fold the other side of the pastry over the chocolate mixture to enclose and use a fork to seal the edges. Place on lined trays and bake for 15 minutes or until golden. Serve warm or at room temperature.

Notes & tips
* Leave turnovers to cool slightly before serving as filling will be very hot.
