
Madras chicken burgers
Cooking Time 15 minutes
Ingredients (serves 4)
* 500g chicken breast mince
* 1 1/2 tablespoons Madras curry paste
* 4 green onions, chopped
* 1 egg, lightly beaten
* 1/2 cup wholegrain breadcrumbs (see note)
* 1 Lebanese cucumber
* olive oil cooking spray
* 400g packet naan bread
* 80g mixed salad leaves
* 200g reduced-fat natural yoghurt
Method
1. Combine mince, curry paste, onion, egg and breadcrumbs in a bowl. Using clean hands, shape mixture into four 3cm-thick patties. Place on a plate, cover and refrigerate for 20 minutes. Using a vegetable peeler, slice cucumber into ribbons.
2. Preheat oven to 180°C. Heat a non-stick frying pan over medium heat. Lightly spray patties with oil and cook for 5 minutes each side or until cooked through. Transfer to a plate. Cover and place in oven to keep warm.
3. Meanwhile, place naan bread on baking tray. Bake for 5 minutes each side or until heated through.
4. Cut naan bread in half crosswise. Place half the bread on plates. Top with salad leaves, chicken patties, cucumber ribbons and a dollop of natural yoghurt. Top with remaining naan bread halves. Serve.
Notes & tips
* To make 1/2 cup breadcrumbs, process 2 slices of day old bread.
* Naan bread is an east Indian flat bread traditionally baked in an tandoor oven. It's made from white flour and leavened lightly wih yeast. You can find it in the bread aisle of your supermarket.
