Beef & soba noodle salad


Preparation Time 10 minutes
Cooking Time 5 minutes

Ingredients (serves 20)
* 90g Hakubaku organic dried soba noodles
* 1 large carrot, peeled, cut into matchsticks
* 1/2 bunch broccolini, cut into 5cm lengths
* 60g baby corn, thinly sliced diagonally
* 50g baby Asian salad leaves
* 150g Herb-crusted roast beef, thinly sliced
* 1/2 cup fresh coriander leaves
* 80ml (1/3 cup) Neil Perry Fresh Soy & Chilli Dressing


Method
1. Cook the noodles in a saucepan of boiling water for 2 minutes. Add the carrot, broccolini and corn and cook for 2 minutes or until tender. Drain and transfer to a serving bowl. Add the salad leaves, beef, coriander and dressing. Toss to combine and serve.
