Bramble cocktails


Ingredients (serves 8)
* 1/2 cup (100g) caster sugar
* 100ml water
* 2 cups (500ml) Bombay Sapphire gin (see note)
* 11/2 cups (375ml) lemon juice
* Crushed ice
* 1/2 cup (125ml) Creme de Mure (see note)


Method
1. Combine sugar and water in a small saucepan over high heat. Bring to the boil. Cook, stirring, for 2 minutes or until sugar dissolves. Remove from heat and set aside to cool.
2. Combine sugar syrup, gin and lemon juice in a jug and stir to combine.
3. Fill serving glasses with crushed ice. Pour the gin mixture evenly among glasses. Top with extra ice. Pour Creme de Mure evenly among glasses and serve immediately.

Notes & tips
* Bombay Sapphire gin is best suited to this recipe, but can be substituted with any gin.
* Creme de Mure or blackberry liqueur is available from specialty liquor shops.
