Roast Beef and Romaine Salad

4 Servings
* 1/4 cup low-fat plain yogurt
* 1/4 cup light mayonnaise
* 1 1/2 tablespoons lemon juice
* Salt and pepper
* 1/2 cup (2 oz.) crumbled blue cheese
* 2 heads romaine lettuce, quartered lengthwise and cut crosswise into 1/2-inch strips (about 9 cups)
* 8 ounces thinly sliced roast beef, cut into small pieces
* 1 cup croutons

Whisk together yogurt, mayonnaise, lemon juice, salt, pepper and 2 Tbsp. water in a small bowl. Stir in blue cheese.

Place romaine in large bowl and toss with dressing to coat. Add roast beef and croutons, and toss again. Serve immediately.
